Turkey Taco Stuffed Bell Peppers

INGREDIENTS:

  • Red bell peppers - 4 medium (560 grams)
  • Ground turkey (or beef), 90%+ lean, uncooked - 1 pound (460 grams)
  • Olive oil - 1 tbsp (14 grams)
  • Taco seasoning - 2-3 tbsp
  • Greek yogurt, non-fat and plain - 4 ounces (113 grams)
  • Hemp seeds - 2 tbsp (20 grams)
  • Nutritional yeast - 1 tbsp (4 grams)
  • Black beans, cooked - 2 cups (344 grams)
  • Green or red salsa - to taste
  • Cilantro, freshly chopped - to taste

INSTRUCTIONS:

  1. Pre-heat the oven to 400°F or 200°C.
  2. Cut the bell peppers in halves and remove the seeds and membrane. Place the bell peppers on a baking sheet lined with aluminum foil or parchment paper and bake for 15 minutes.
  3. While it bakes, place a pan over medium heat. Once hot, add the olive oil and the ground turkey. Cook for about 8 minutes, and then add the taco seasoning. Mix and cook for another minute. Turn off the heat.
  4. Drain the black beans and gently mix them in a bowl together with the cooked ground turkey, Greek yogurt, hemp seeds and nutritional yeast.
  5. Remove the bell peppers from the oven and fill them with the turkey filling. Be very careful not to burn yourself (if very hot wait a couple of minutes for the bell peppers to cool down before filling them). Place the stuffed bell peppers back in the oven and bake for another 10 minutes.
  6. Serve and garnish with red or green salsa and chopped cilantro (optional). Enjoy!

*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for up to 3 days. Store the salsa and cilantro separately, and only add it when serving.

Recommended serving size for bariatric patients = 1 half pepper.

Recommended serving size for non-bariatric family members = 2 half peppers plus additional steamed veggies of choice if desired.
