Scrambled Egg Whites with Veggies (Pre-Op)

INGREDIENTS:

  • Egg whites - 4 large (132 grams)
  • Yellow onion, chopped - 3 tbsp (30 grams)
  • Green bell pepper - 1/2 medium (70 grams)
  • Grape tomatoes - 2 oz (57 grams)
  • Spinach, fresh - 1 oz (28 grams)
  • Sea salt - 1/8 tsp (pinch)
  • Black pepper, freshly ground - 1/8 tsp (pinch)
  • Hemp seeds - 1/2 tbsp (5 grams)
  • Clementine - 1 medium (70 grams)

INSTRUCTIONS:

  1. Separate the egg whites form the yolks if using whole eggs. Put them in a small bowl and set aside. Discard the yolks. To learn how to separate egg whites from the yolks click here.
  2. Chop the yellow onion, green bell pepper, tomatoes, and spinach.
  3. Place a non-sick pan over medium-low heat. Once hot, add a bit of non-stick oil spray and the yellow onion and green bell pepper. Cook for 3 minutes.
  4. Add the egg whites, tomatoes, spinach, salt and pepper. Cook for 5 minutes. Mix occasionally for it to cook evenly.
  5. Serve and garnish with hemp seeds. Have a clementine on the side as dessert. Enjoy!

*Note: Stays fresh in the refrigerator for 1 day. You can replace the clementine for half an orange, a peach, or half a cup of melon.
