Scrambled Egg Whites

INGREDIENTS:

  • Eggs, whites only - 4 medium (132 grams)
  • Olive oil - 1 tsp 95 grams)
  • Sea salt - 1/4 tsp

INSTRUCTIONS:

  1. Separate the egg whites from the yolks and place them in a small bowl. Set aside and discard the yolks.
  2. Place a non-stick pan over medium heat and add the olive oil.
  3. Once the pan is hot, add the egg whites and season with the sea salt. Cook for 2-3 minutes or until fully cooked. Stir occasionally. Serve and enjoy!

*Note: You can also make double the amount in this recipe and store the leftovers In the refrigerator for later use. Stays fresh in the refrigerator for up to 3 days.

Nutritionist notes: Scrambled egg whites and oatmeal are the only two foods that are not pureed but are ok for this stage because they are very soft and easy to eat. Patients should still chew them thoroughly to prevent any discomfort. This stage is a perfect time to really start practicing to chew your food thoroughly (at least 25 times).
