Rotisserie Chicken with Hummus

INGREDIENTS:

  • Chickpeas, cooked, no added salt or low sodium - 3/4 cup (123 grams)
  • Tahini (ground sesame paste) - 1 tbsp (15 grams)
  • Olive oil - 1 tbsp (14 grams)
  • Water - 2 tbsp (30 grams)
  • Cumin, ground - 1/4 tsp
  • Sea salt - 1/4 tsp
  • Garlic powder - 1/4 tsp
  • Paprika, ground - 1/8 tsp (pinch)
  • Black pepper, freshly ground - 1/8 tsp (pinch)
  • Chicken, rotisserie, cooked, skinless, light and dark meat combined - 3 oz (85 grams)

INSTRUCTIONS:

  1. Drain the chickpeas but do not rinse them.
  2. Add all ingredients except the chicken to a food processor (not a blender) and mix until creamy. Serve together with the chicken and enjoy!

*Note: Divide equally by the listed number of servings. Hummus stays fresh in the refrigerator for 5-7 days and chicken for about 4 days.
