Lemon Pepper Chicken Mason Jar Salad (Pre-Op)

INGREDIENTS:

  • Rotisserie chicken, cooked, light and dark meat combined - 3 oz (85 grams)
  • Red bell pepper - 1/2 medium (70 grams)
  • Cucumber - 1/2 medium (150 grams)
  • Chickpeas, cooked - 1/3 cup (55 grams)
  • Romaine lettuce, chopped - 1 handful (40 grams)

INGREDIENTS FOR DRESSING:

  • Red wine vinegar - 1 tbsp (15 grams)
  • Olive oil - 1/2 tbsp (7 grams)
  • Lemon, juice only - 1/4 medium (12 grams)
  • Lemon pepper seasoning - 1/2 tsp

INSTRUCTIONS:

  1. Shred the rotisserie chicken. Chop the red bell pepper, cucumber, and romaine lettuce.
  2. Mix the ingredients for the dressing in a 24 oz mason jar. Put on the lid and shake well for the dressing to mix properly.
  3. Remove the lid and layer in the ingredients in the following order: red bell pepper, cucumber, chickpeas, rotisserie chicken, and romaine lettuce.
  4. Store in the refrigerator and give it a good shake to mix in the dressing when ready to serve. Enjoy!

*Note: Stays fresh in the refrigerator for 2 days.
