Italian Seasoned Ground Turkey

INGREDIENTS:

  • Italian seasoning - 3/4 tsp
  • Sea salt - 1/4 tsp
  • Black pepper, ground - 1/4 tsp
  • Olive oil - 1 tsp (5 grams)
  • Ground turkey, 90%+ lean, uncooked - 260 grams
  • Greek yogurt, non-fat, plain - 2 tbsp (28 grams)
  • Arugula (aka rocket, rucola) - 2 small handful (40 grams)(can substitute with spinach if desired)

INSTRUCTIONS:

  1. Add all the spices to a small bowl (thyme, basil, parsley, sea salt, and black pepper). Set aside.
  2. Place a large pan over medium heat. Once hot, add the olive oil, ground turkey, and the spices. Cook for 7-8 minutes or until crispy brown, then add the Greek yogurt, mix gently and turn off the heat.
  3. Serve with chopped arugula and enjoy!

*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for up to 4 days. Store arugula in a separate container.
