Hummus & Veggie Sticks (Pre-Op)

INGREDIENTS FOR HUMMUS:

  • Chickpeas, cooked, low sodium or no added salt - 3/4 cup (123 grams)
  • Tahini (ground sesame paste) - 1/2 tbsp (8 grams)(optional)
  • Olive oil - 1/2 tbsp (7 grams)
  • Water - 2 tbsp (30 grams)
  • Lemon, juice only - 1/4 medium (12 grams)
  • Garlic powder - 1/4 tsp
  • Sea salt - 1/4 tsp
  • Cumin, ground - 1/8 tsp
  • Paprika, ground - 1/8 tsp
  • Black pepper, freshly ground - 1/8 tsp

OTHER INGREDIENTS:

  • Raw veggies of choice - 12 oz (340 grams)

INSTRUCTIONS:

  1. Drain the chickpeas but do not rinse them.
  2. Add all the hummus ingredients to a food processor (not a blender) and mix until creamy.
  3. Serve 2 ounces of hummus with 4 ounces of your raw veggie of choice. Enjoy!

*Note: Divide equally by the listed number of servings. Hummus stays fresh in the refrigerator for 5-7 days. Other veggie options you may use include sugar snap peas, bell pepper, and parsnips.
