Garlic Sesame Chicken Bowl (Pre-Op)

INGREDIENTS:

  • Brown rice, cooked - 1 1/2 cup (270 grams)
  • Zucchini - 1 large (300 grams)
  • Chicken breast, skinless, uncooked - 240 grams or 8.5 oz
  • Garlic clove, minced - 3 medium (12 grams or 3 tsp minced garlic)
  • Sesame oil - 1/2 tbsp (7 grams)
  • Sea salt - 1/4 tsp
  • Black pepper, freshly ground - 1/8 tsp

INSTRUCTIONS:

  1. Cook the brown rice if using uncooked (1/2 cup uncooked).
  2. Chop the zucchini and chicken breast. Measure the minced garlic and spices.
  3. Place a large pan over medium heat. Once hot, add the sesame oil and chicken. Season with salt and pepper. Cook for 2 minutes and then add the zucchini and garlic. Cook for another 8 minutes or until the chicken is fully cooked. Stir constantly to prevent the garlic from burning.
  4. Serve with brown rice. Enjoy!

*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for 3-4 days. You can also make double this recipe to get 4 servings. Simply cook in two rounds or use a larger pan and add 1-3 minutes to the cooking time.
