Egg Roll Bowl

INGREDIENTS:

  • Ground beef, 90%+ lean, uncooked - 12 oz (340 grams)
  • Olive oil - 1/2 tbsp (7 grams)
  • Yellow onion, chopped - 3/4 medium (120 grams)
  • Garlic clove, minced - 2 medium (8 grams or 2 tsp minced)
  • Ginger root, minced - 1/2 tbsp (5 grams)
  • Egg, whole - 1 large (50 grams)
  • Coleslaw mix - 10 oz (285 grams)
  • Scallions - 1 stalk (15 grams)(optional)

INGREDIENTS FOR SAUCE:

  • Soy sauce, low sodium - 3 tbsp (45 grams)
  • Rice vinegar - 1 tbsp (15 grams)
  • Sriracha - 1 tsp (5 grams)
  • Agave syrup - 1 tsp (7 grams)
  • Sesame oil - 1/2 tbsp (7 grams)
  • Black pepper, ground - 1/4 tsp

INSTRUCTIONS:

  1. Add all sauce ingredients to a small bowl and mix.
  2. Chop the onion. Mince the garlic and ginger.
  3. Place a large pan over medium heat. Once hot, add the olive oil, onion and garlic. Cook for 2 minutes.
  4. Add the ginger and ground beef. Mix and cook for about 6 minutes or until the beef is fully cooked.
  5. Slide the beef mix to one side of the pad and add the egg in the other side. It will cook fast (1 minute). Then mix it with everything else.
  6. Reduce the heat to medium-low. Add the coleslaw and sauce. Mix frequently for 1-2 minutes. Then turn off the heat.
  7. Garnish with scallions to taste and enjoy!

*Note: Divide equally by the listed number of servings. Can add more sriracha for additional heat. Stays fresh in the refrigerator for about 3 days. Freezer friendly (defrost overnight in the refrigerator).
