Easy Shrimp Stir-Fry with Cauliflower Rice (Pre-Op)

INGREDIENTS:

  • Cauliflower, raw and fresh - 2 cups (200 grams)
  • Water - 2 tbsp
  • Shrimp, uncooked, peeled and deveined - 280 grams or 10 oz
  • Sesame oil - 1 tbsp (14 grams)(divided)
  • Sea salt - 1/4 tsp
  • White mushrooms , sliced - 100 grams or 3.5 oz
  • Sugar snap peas, with pod, whole - 2 cup (126 grams)
  • Red bell pepper, 1 medium (140 grams)
  • Garlic clove, minced - 1 medium (4 grams)(or 1 tsp minced)
  • Soy sauce, low sodium - 1 1/2 tbsp (23 grams)
  • Agave syrup - 1/2 tbsp (11 grams)
  • Sesame seeds - 1 tsp (3 grams)
  • Scallions - 1/2 stalk (8 grams)

INSTRUCTIONS:

  1. Make the cauliflower rice: Grate the cauliflower. Place a large pan over medium heat. Once hot, add the water and cauliflower. Cook for about 2 minutes. Stir frequently. Transfer to a clean plate.
  2. Keep the same pan over medium heat and add the sesame oil and shrimp (check notes for details on shrimp). Season with sea salt and cook for 1-2 minutes on each side. Do not overcook or they will become rubbery. Transfer to a clean plate when done.
  3. Add the remaining sesame oil to the same pan together with the mushrooms, sugar snap peas, bell pepper, and garlic. Cook for about 2 minutes and then add the soy sauce, agave syrup, and sesame seeds. Cook for another minute and the add the shrimp back. Stir to combine and turn off the heat.
  4. Serve with cauliflower rice and garnish with scallions. Enjoy!

*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for up to 3 days. Shrimp should be peeled, clean (deveined), and without a head and tail. If frozen, thaw under running cold water or in the refrigerator overnight. Pat dry and remove the tails before cooking. You may also peel and devein them yourself if desired. We recommend storing the cauliflower rice separate from the shrimp stir-fry to prevent it form getting mushy.

Nutritionist notes: Cauliflower rice is a great substitute for rice during your pre-op diet because it saves many calories but still makes you feel full. However, after surgery, cauliflower is a good veggie to have but should not replace rice or other whole grains, otherwise you may risk having a meal that is too low on calories. Please note that this recipe if for future gastric sleeve patients that need to lose weight before their surgery. Do not follow this recipe if you already had your surgery.
