Chocolate Superfood Energy Balls

INGREDIENTS:

  • Pumpkin seeds - 2 tbsp (20 grams)
  • Dates, medjool, pitted - 5 medium (120 grams)
  • Rolled oats, uncooked - 3/4 cup (72 grams)
  • Almond butter - 4 tbsp (64 grams)
  • Raw cacao powder - 2 tbsp (11 grams)
  • Chia seeds - 1 tbsp (12 grams)
  • Hemp seeds - 1 tbsp (10 grams)
  • Coconut oil - 1/2 tbsp (7 grams)
  • Pure vanilla extract - 1/4 tsp
  • Sea salt - 1/8 tsp

INSTRUCTIONS:

  1. Add the pumpkin seeds to a food processor by themselves and mix to break them down a bit.
  2. Add all of the remaining ingredients and mix until pasty.
  3. Use your hands to squeeze the paste to make it compact and form 1-inch sized balls. Repeat until there is no more mixture left (should make around 10 balls).
  4. Eat as is or place in the refrigerator for 30 minutes before eating. Enjoy!

**Note: Stays fresh in the refrigerator for 5-7 days in a sealed container. A food processor is needed for this recipe; a blender will not give you the same results.
