Chipotle Tuna Patties (Pre-Op)

INGREDIENTS:

  • Tuna, canned, cooked - 8 oz (225 grams)
  • Egg, white - 2 large (66 grams)
  • Panko bread crumbs - 3 tbsp (11 grams)
  • Chili chipotle pepper, ground - 1/4 tsp
  • Parsley, dried leaves - 1/4 tsp
  • Garlic powder - 1/4 tsp
  • Sea salt - 1/4 tsp
  • Olive oil - 1 tbsp (14 grams)
  • Green beans (string beans), chopped - 2 cups (230 grams)
  • Corn kernels - 1 cup (135 gram)
  • Lemon, juice only - 1/2 medium (24 grams)(or to taste)

INSTRUCTIONS:

  1. Drain the tuna and add it a large bowl together with the egg whites, panko bread crumbs, and the spices (chipotle, parsley, garlic, sea salt). Mix gently with a spoon until well combined.
  2. Divide the mix into 6 portions and use your hands to form patties out of each. Make sure they are nice and tight on the edges. You can place them on a cutting board when ready.
  3. Place a large pan over medium heat. Once hot, add the olive oil and carefully place the patties on the pan. Cook for 2-3 minutes on each side and then turn off the heat. If you're pan is not big enough to fit all of them you may need to do 2 rounds so divide the olive oil as necessary. Transfer to a clean plate when done.
  4. Unfreeze the corn and lightly steam the green beans. You can also add the green beans to the same pan where you cooked the patties together with a bit of water and cook for 3-4 minutes (they absorb a bit of flavor from the patties).
  5. Serve the veggies with the tuna patties and squeeze some lemon juice on top. Enjoy!

*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for 3-4 days.
