Chicken Chipotle Wrap

INGREDIENTS:

  • Cream cheese, light - 1 1/2 tbsp ( 25 grams)
  • Chipotle paste - 1/2 tsp (3 grams)
  • Flour tortilla - 1 medium (43 grams)
  • Rotisserie chicken, cooked, light and dark meat combined - 2 oz (60 grams)
  • Avocado - 1/4 small-medium (25 grams)
  • Red onion - To taste
  • Spinach, fresh 1/4 handful (10 grams)

INSTRUCTIONS:

  1. In a small bowl, mix cream cheese and chipotle paste. Mix properly.
  2. Place a pan over medium heat. Heat up the tortilla lightly on both sides (about 30 seconds on each side).
  3. Remove the tortilla from the pan and add the chipotle cream mix. Spread out evenly.
  4. Shred the rotisserie chicken and add to the tortilla. Slice the avocado and chop the red onion and spinach. Add everything to the tortilla and spread out evenly.
  5. Roll the tortilla into a tight wrap. If needed, add a toothpick for stability. Serve and enjoy!

*Note: Stays fresh in the refrigerator for up to 1-2 days.
