Chicken Apple Zucchini Puree

INGREDIENTS:

  • Chicken breast, skinless, uncooked - 170 grams
  • Zucchini - 1 medium (200 grams)
  • Applesauce, unsweetened 2 tbsp (31 grams)

INSTRUCTIONS:

  1. Cut the chicken breast into slices and the zucchini into 4-5 large pieces.
  2. Fill a medium-sized pot halfway through with water. Place over high heat and add the chicken. Bring to a boil. Remove and discard any foam that forms. Once boiling, cover and reduce the heat to low. Cook for 13-14 minutes or until fully cooked (no pink).
  3. Add the zucchini to the pot after 5 minutes of cooking for chicken or boil for about 5 minutes in a separate pot.
  4. Once done, transfer the chicken and zucchini to a blender or food processor together with the applesauce. Mix until smooth (no chunks should remain). Serve and enjoy!

*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for up to 4 days. Can also be frozen (in individual servings) for up to 2 weeks and defrosted overnight in the refrigerator when needed.
