Cashew Tofu Stir-Fry

INGREDIENTS:

  • Tofu, unflavored, extra firm - 300 grams
  • Sesame oil, toasted - 1 tsp (5 grams)
  • Red or green bell pepper - 1 medium (140 grams)
  • Cashews, raw and unsalted - 1 1/2 oz (42 grams)
  • Quinoa, cooked - 3/4 cup (139 grams)

INGREDIENTS:

  • Garlic clove, minced - 1 medium (4 grams or 1 tsp minced garlic)
  • Ginger root, grated - 1/2 tbsp (5 grams)
  • Soy sauce, low sodium - 3 tbsp (45 grams)
  • Agave syrup - 1 tbsp (21 grams)
  • Hoisin sauce - 1/2 tbsp (8 grams)
  • Rice vinegar - 1/2 tbsp (8 grams)
  • Sesame oil - 1/2 tsp (2 grams)
  • Cornstarch or all-purpose flour - 1/2 tsp (1 gram)

INSTRUCTIONS:

  1. Cook the quinoa if using uncooked (1/4 cup uncooked).
  2. Add all the sauce ingredients to a bowl and whisk until the flour is fully dissolved.
  3. Cut the tofu into cubes. Chop the green bell pepper.
  4. Place a large pan over medium heat. Once hot, add the sesame oil and the tofu Cook for about 5 minutes and then add the bell peppers. Cook for another 5 minutes. Make sure to cook the tofu on all sides.
  5. Reduce the heat to low and add the sauce and cashews. Let stand for 1-2 minutes so the sauce thickens and then turn off the heat.
  6. Serve with cooked quinoa and enjoy!

*Note: Divide equally by the listed number of ingredients. Stays fresh in the refrigerator for up to 3 days. We recommend storing the quinoa separate from the stir-fry.
