Blueberry Almond Protein Cookies

INGREDIENTS:

  • Flax seeds, ground - 1 tbsp (8 grams)
  • Water - 2 1/2 tbsp
  • Banana - 1 medium (120 grams)
  • Almond butter - 4 tbsp (64 grams)
  • Vanilla-flavored protein powder - 3 tbsp (20 grams)(click here for our favorite brand)
  • Baking powder - 1/2 tsp
  • Cinnamon, ground - 1/2 tsp
  • Nutmeg, ground - 1/2 tsp
  • Rolled oats, uncooked - 1/2 cup (48 grams)
  • Blueberries - 1/4 cup (38 grams)

INSTRUCTIONS:

  1. Turn on the oven to 350°F or 175°C.
  2. Create a flax “egg.” In a small bowl, mix the ground flax seeds with the water. Let stand for 5 minutes before using.
  3. Meanwhile, in a separate larger bowl, mash the banana as best as you can. Then, add the almond butter and flax egg. Mix thoroughly.
  4. Add the dry ingredients (vanilla protein powder, baking powder, cinnamon, nutmeg, and oats). Mix properly and then gently mix in the blueberries (so they don’t pop).
  5. Line a baking sheet with aluminum foil and lightly spray it with non-stick oil spray to prevent the cookies from getting stuck. Divide the batter into 4 equal parts and add them to the baking sheet. Flatten out the cookies a bit and try to make them as round as possible. Bake them for about 35 minutes. Once done, let them cool down for 5 minutes. Enjoy!

*Notes: Stays fresh in the refrigerator for about a week. Store in an air-tight container.
